Abstracts: "The experimental study of strongly-correlated ensembles of particles with competing orders not only requires a high degree of control, but also access to the key observables that characterize the underlying physics. I will present recent advances on the manipulation and observation of an ultracold gas of lithium atoms with both short- and long-range interactions, strongly coupled to an optical cavity. As the strength of long-range cavity-mediated interactions is increased, the system features a phase transition into a density-wave ordered state, which we probe in real-time via the cavity leakage. Additionally, using a microscope with high spatial resolution, we observe in-situ the formation of a density modulation as the system enters the ordered phase. This paves the way for the local manipulation of atomic gases in cavities."
